Yield = 8-10 fritters
80 g Nextjen All Purpose Baking Blend (flour)
2.5 g baking powder
2 g salt
40 g sour cream
40 g buttermilk
1 egg
Mix everything together till smooth.
Roll out on sweet rice flour to 1 cm thick for cakey fritter and .5 cm thick for crispy fritter.
Cut in rectangles and make a straight slit in the middle, pulling one end through the slit.
Deep fry in 375°F fat.
Flip once to ensure golden browning on both sides.
Drain on paper towel and toss in cinnamon sugar, icing sugar or honey.
Serve right away with fresh cold watermelon!
