Tuille Cookies

Yields 25 Prep Time 10 min Cook Time 3 min Total Time 13 min

Ingredients

  1. 50 g or 1/4 cup Butter
  2. 50 g or 1/3 cup Icing sugar
  3. 1 Egg white
  4. 1 g or 1/8 tsp Vanilla
  5. 1 pinch Salt
  6. 50 g or 1/3 cup Nextjen All Purpose Baking Blend (flour)

Instructions

  1. By hand or with a mixer, mix together butter and icing sugar.
  2. Add egg white, vanilla and salt, and mix until combined.
  3. Mix in flour.
  4. With a small spatula, spread the dough very thin onto a silicone baking sheet. The cookies can be garnished with nuts or flaked coconut.
  5. Bake at 350°F for 2-3 minutes.
  6. While they are still warm from the oven, you can roll them into shapes. If they crack, put them back into the oven to rewarm and they will become flexible again.

Notes

  1. The cookie dough can be kept in the fridge for 1 week.
  2. These go great with custards, ice cream, poached fruit or sabayon!
