Jam Jams or Thumbprint Cookies

Yields 16 Prep Time 15 min Cook Time 10 min Total Time 25 min

Ingredients

  1. 120 g or 1/2 cup Butter
  2. 50 g or 1/3 cup Brown sugar
  3. 50 g or 1/4 cup White sugar
  4. 2 Egg yolks
  5. 1 pinch Salt
  6. 10 g or 2 tsp Vanilla
  7. 200 g or 1 1/3 cup Nextjen All Purpose Baking Blend flour)
  8. 4 g or 3/4 tsp Baking powder

Instructions

  1. Cream butter and sugars together in a mixer with a paddle attachment.
  2. Add the eggs yolks, vanilla, and salt, and mix until incorporated.
  3. Add flour and baking powder, and mix for 1 minute.
  4. Divide mixture into 16 even sized pieces, roll into balls, place on cookie sheets, and flatten slightly (they can be rolled in icing or granulated sugar if you wish).
  5. Make an indentation with your thumb, in the center, and fill with your favorite jam.
  6. Bake at 350°F for 8-10 minutes.
