Jam Jams or Thumbprint Cookies
Yields 16 Prep Time 15 min Cook Time 10 min Total Time 25 min
Ingredients
- 120 g or 1/2 cup Butter
- 50 g or 1/3 cup Brown sugar
- 50 g or 1/4 cup White sugar
- 2 Egg yolks
- 1 pinch Salt
- 10 g or 2 tsp Vanilla
- 200 g or 1 1/3 cup Nextjen All Purpose Baking Blend flour)
- 4 g or 3/4 tsp Baking powder
Instructions
- Cream butter and sugars together in a mixer with a paddle attachment.
- Add the eggs yolks, vanilla, and salt, and mix until incorporated.
- Add flour and baking powder, and mix for 1 minute.
- Divide mixture into 16 even sized pieces, roll into balls, place on cookie sheets, and flatten slightly (they can be rolled in icing or granulated sugar if you wish).
- Make an indentation with your thumb, in the center, and fill with your favorite jam.
- Bake at 350°F for 8-10 minutes.
