Ingredients
  1. 15 g or 1 tbsp Vanilla
  2. 120 g or 1/2 cup +1 tbsp Butter
  3. 220 g or 1 3/4 cup Brown sugar
  4. 3 Eggs
  5. 35 g or 3 tbsp Oil
  6. 5 g or 1 tsp Cinnamon
  7. 5 g or 1 tsp Pumpkin pie spice
  8. 1 g or 1/4 tsp Ginger
  9. 5 g or 1 tsp Salt
  10. 225 g or 1 cup Grated carrot
  11. 25 g 1/4 cup Raisins (optional)
  12. 50 g or 1/2 cup Chopped walnuts (optional)
  13. 200 g or 1 1/3 cup Nextjen All Purpose Baking Blend (flour)
  14. 4 g or 3/4 tsp Baking powder
  15. 1.5 g or 1/4 tsp Baking soda

Instructions
  1. In a mixer with a paddle attachment, cream together butter, sugar, and vanilla till smooth (2 minutes).
  2. Add eggs, oil, spices, and salt; mix for 1 minute.
  3. Add shredded carrots, raisins and walnuts (if using) and mix until just incorporated.
  4. Add the flour, baking powder and baking soda; mix until incorporated, about 1 minute.
  5. Scrape cake batter onto a baking tray 20cm x 25 cm (8” x 10”).
  6. In a 350°F oven bake for 20-25 minutes.
