Bran Muffins

Ingredients
- 50 g or 1/4 cup Honey
- 150 g or 1 cup +1 tbsp Brown sugar
- 2 g or 1/2 tsp Cinnamon
- 1 pinch Ginger
- 1 pinch Clove
- 1 pinch Pumpkin pie spice
- 2 g or 1/2 tsp Salt
- 5 eggs
- 150 g or 3/4 cup Yogurt
- 75 g or 1/4 cup Oil
- 10 g or 2 tsp Vanilla
- 100 g or 1 cup Raisins
- 125 g or 1/2 cup Milk
- 40 g or 1/4 tbsp Psyllium husk
- 80 g or 1/2 cup Rice bran (or 90 g corn bran)
- 125 g or 3/4 cup Nextjen All Purpose Baking Blend (flour)
- 8 g or 1 tbsp Baking powder
- 3 g or 1/4 tsp Baking soda
- 100 g or 3/4 cup Walnuts chopped (optional)
Instructions
- Combine honey, sugar, spices, eggs, salt, yogurt, oil, vanilla, raisins and milk; mix until incorporated.
- Add psyllium, rice bran (corn bran), flour, baking powder, baking soda and nuts and continue mixing until there are no lumps.
- Scoop into muffin tins.
- Bake at 350°F for 12-15 minutes.
- Test temperature with a probe to reach 87-95°C (190-200°F).
