Ladyfingers
Yields 25 Prep Time 10 min Cook Time 15 min Total Time 25 min
Ingredients
- 4 Egg whites
- 50 g or 1/4 cup White sugar
- 1 g or 1/4 tsp Salt
- 4 Egg yolks
- 50 g or 1/4 cup White sugar
- 10 g or 2 tsp Vanilla
- 100 g or 3/4 cup Nextjen All Purpose Baking Blend (flour)
Instructions
- Whip egg whites with salt and 50 g sugar, in a mixer, until they form soft peaks.
- Scrape into a bowl and set aside.
- Whip egg yolks with 50 g sugar and vanilla, in a mixer, to ribbon stage (all sugar has dissolved and the egg yolks are fluffy and soft yellow).
- Fold in flour gently.
- Fold in whipped egg whites until homogenized without knocking the air out.
- Fill a piping bag with the mix and pipe 7 to 8 cm fingers (3”) on a parchment paper lined baking tray.
- Bake in a 350°F oven for 10 minutes then lower the oven temperature to 200°F for another 10 to 15 minutes.
Notes
- Good with coffee…GREAT in Tiramisu!
