Bran Muffins

Ingredients

  1. 50 g or 1/4 cup Honey
  2. 150 g or 1 cup +1 tbsp Brown sugar
  3. 2 g or 1/2 tsp Cinnamon
  4. 1 pinch Ginger
  5. 1 pinch Clove
  6. 1 pinch Pumpkin pie spice
  7. 2 g or 1/2 tsp Salt
  8. 5 eggs
  9. 150 g or 3/4 cup Yogurt
  10. 75 g or 1/4 cup Oil
  11. 10 g or 2 tsp Vanilla
  12. 100 g or 1 cup Raisins
  13. 125 g or 1/2 cup Milk
  14. 40 g or 1/4 tbsp Psyllium husk
  15. 80 g or 1/2 cup Rice bran (or 90 g corn bran)
  16. 125 g or 3/4 cup Nextjen All Purpose Baking Blend (flour)
  17. 8 g or 1 tbsp Baking powder
  18. 3 g or 1/4 tsp Baking soda
  19. 100 g or 3/4 cup Walnuts chopped (optional)

Instructions

  1. Combine honey, sugar, spices, eggs, salt, yogurt, oil, vanilla, raisins and milk; mix until incorporated.
  2. Add psyllium, rice bran (corn bran), flour, baking powder, baking soda and nuts and continue mixing until there are no lumps.
  3. Scoop into muffin tins.
  4. Bake at 350°F for 12-15 minutes.
  5. Test temperature with a probe to reach 87-95°C (190-200°F).
