Rich Tea Biscuits
Yields 22 Prep Time 10 min Cook Time 10 min Total Time 20 min
Ingredients
- 2.5 g or 1/2 tsp Salt
- 40 g or 2 tbsp + 1 tsp Brown sugar
- 80 g or 1/3 cup White sugar
- 180 g or 3/4 cup Butter
- 8 g or 1 1/2 tsp Baking powder
- 240 g or 1 3/4 cup Nextjen All Purpose Baking Blend (flour)
- 15 g or 1 tbsp milk
- 2.5 g or 1/2 tsp Vanilla
Instructions
- Mix all dry ingredients and butter together with the paddle attachment of a mixer until the butter is pea sized.
- Add the milk and vanilla and mix for 1 minute.
- Roll the dough out on sweet rice flour until it is 5 mm thick.
- Cut into rounds and place on a baking sheet (you can sprinkle the tops with granulated sugar); reroll the trim and cut out more cookies.
- Bake for 8-10 minutes at 350°F.
Notes
- You want the cookies to be golden; they can be dipped in chocolate or enjoyed plain with tea!
