Rich Tea Biscuits

Ingredients

  1. 2.5 g or 1/2 tsp Salt
  2. 40 g or 2 tbsp + 1 tsp Brown sugar
  3. 80 g or 1/3 cup White sugar
  4. 180 g or 3/4 cup Butter
  5. 8 g or 1 1/2 tsp Baking powder
  6. 240 g or 1 3/4 cup Nextjen All Purpose Baking Blend (flour)
  7. 15 g or 1 tbsp milk
  8. 2.5 g or 1/2 tsp Vanilla

Instructions

  1. Mix all dry ingredients and butter together with the paddle attachment of a mixer until the butter is pea sized.
  2. Add the milk and vanilla and mix for 1 minute.
  3. Roll the dough out on sweet rice flour until it is 5 mm thick.
  4. Cut into rounds and place on a baking sheet (you can sprinkle the tops with granulated sugar); reroll the trim and cut out more cookies.
  5. Bake for 8-10 minutes at 350°F.

  1. You want the cookies to be golden; they can be dipped in chocolate or enjoyed plain with tea!
