Peanut Butter Cookies

Yields 20 Prep Time 10 min Cook Time 12 min Total Time 22 min

Ingredients

  1. 125 g or 1/2 cup +1 tbsp Butter
  2. 125 g or 1/2 cup +1 tbsp White sugar
  3. 125 g or 1 cup Brown sugar
  4. 125 g or 1/2 cup Peanut butter (almond or seed butter)
  5. 1 Egg
  6. 5 g or 1 tsp Vanilla
  7. 190 g or 1 1/3 cup Nextjen All Purpose Baking Blend (flour)
  8. 3.5 g or 1/2 tsp Baking soda
  9. 1.25 g or 1/4 tsp Salt

Instructions

  1. Using the paddle attachment of a mixer, cream together butter, sugars and peanut butter for 2 minutes.
  2. Add the egg and vanilla and mix for 2 minutes.
  3. Add the flour, baking soda and salt, mixing until incorporated.
  4. Scoop cookies using a teaspoon, then roll into balls by hand before placing them on the cookie sheet and marking them with a fork.
  5. Bake at 350°F for 10-12 minutes.

Notes

  1. **For chocolate peanut butter cookies, add 15 g of cocoa powder while creaming butter and sugar.
