Chocolate Wafer

Ingredients

  1. 25 g or 1/4 cup Almond flour (optional)
  2. 100 g or 1/2 cup Butter
  3. 145 g or 1/2 cup Sugar
  4. 80 g or 3/4 cup Cocoa powder
  5. 145 g or 1 cup Nextjen All Purpose Baking Blend (flour)
  6. 2 g 1/2 tsp Cinnamon
  7. 2 g or 1/2 tsp Salt
  8. 1 Egg
  9. 10 g 2 tsp Vanilla

Instructions

  1. Mix almond flour, butter, sugar, cocoa, flour, cinnamon and salt with the paddle attachment of a mixer until it is the texture of fine meal.
  2. Add egg and vanilla, and mix until it comes together.
  3. Roll dough into a log shape chill and chill for 10-20 min.
  4. Cut thin (2-3mm) rounds and lay on a cookie tray.
  5. Bake at 325°F for 10 to 12 minutes.
