Peanut Butter Cookies
Yields 20 Prep Time 10 min Cook Time 12 min Total Time 22 min
Ingredients
- 125 g or 1/2 cup +1 tbsp Butter
- 125 g or 1/2 cup +1 tbsp White sugar
- 125 g or 1 cup Brown sugar
- 125 g or 1/2 cup Peanut butter (almond or seed butter)
- 1 Egg
- 5 g or 1 tsp Vanilla
- 190 g or 1 1/3 cup Nextjen All Purpose Baking Blend (flour)
- 3.5 g or 1/2 tsp Baking soda
- 1.25 g or 1/4 tsp Salt
Instructions
- Using the paddle attachment of a mixer, cream together butter, sugars and peanut butter for 2 minutes.
- Add the egg and vanilla and mix for 2 minutes.
- Add the flour, baking soda and salt, mixing until incorporated.
- Scoop cookies using a teaspoon, then roll into balls by hand before placing them on the cookie sheet and marking them with a fork.
- Bake at 350°F for 10-12 minutes.
Notes
- **For chocolate peanut butter cookies, add 15 g of cocoa powder while creaming butter and sugar.
