Ladyfingers

Ingredients

  1. 4 Egg whites
  2. 50 g or 1/4 cup White sugar
  3. 1 g or 1/4 tsp Salt
  4. 4 Egg yolks
  5. 50 g or 1/4 cup White sugar
  6. 10 g or 2 tsp Vanilla
  7. 100 g or 3/4 cup Nextjen All Purpose Baking Blend (flour)

Instructions

  1. Whip egg whites with salt and 50 g sugar, in a mixer, until they form soft peaks.
  2. Scrape into a bowl and set aside.
  3. Whip egg yolks with 50 g sugar and vanilla, in a mixer, to ribbon stage (all sugar has dissolved and the egg yolks are fluffy and soft yellow).
  4. Fold in flour gently.
  5. Fold in whipped egg whites until homogenized without knocking the air out.
  6. Fill a piping bag with the mix and pipe 7 to 8 cm fingers (3”) on a parchment paper lined baking tray.
  7. Bake in a 350°F oven for 10 minutes then lower the oven temperature to 200°F for another 10 to 15 minutes.

  1. Good with coffee…GREAT in Tiramisu!
